This is perhaps the most well known Indian dish that there is. It is a staple at every Indian restaurant, and is very popular in Punjab and the rest of North India. It is surprisingly simple to make, especially if you have grill.


  • 2kg of chicken thigh fillets
  • 2 tablespoons of black salt
  • 2 tablespoons of white pepper
  • 2 tablespoons of coriander powder
  • 2 tablespoons of hot curry powder
  • 2 tablespoons of chilli powder
  • 2 finely shredded whole heads of garlic
  • 2 inches of finely shredded ginger
  • 4 tablespoons of mustard oil
  • 1 lime
  • 1 tablespoon of tandoori food colouring powder
